You know how I've always wondered about potato waffles? How I have wondered aloud so many times about putting mashed potatoes in a waffle iron and how it would be? How I've fantasized about gravy in all the little waffle-wells? Well I finally got a waffle iron thanks to the good folks at CSN stores and <a href="http://gogetsmashed.blogspot.com/">Ashley over at Go Get S.M.A.S.H.E.D.</a>(I won Ashley's CSN giveaway for $75 and got <a href="http://www.csnstores.com/Chefs-Choice-8400100-CCE1061.html">this awesome waffle iron</a>!) I know you can get waffle irons for less money, but I splurged since it was a win and I am glad I did.<br />

I realize as I write this that this post is meaningless without pictures. So, because I want to be a good blogger I will go right now, at 10:00 on Sunday morning, and make a potato waffle to show you. I just hope I remember my camera and to take a picture. I forget stuff a lot. Seriously. <br />

Forgive the terrible photo. I took my camera in the kitchen, took pictures of silly stuff, and then the battery died as I put the potato on the waffle iron. Classic. I realized I need a whole cup of potatoes to make a full potato waffle vs. the half cup of batter to make a 'normal' waffle. I scoff at normal! If I get a lot of comments I will bake cupcakes today! (So leave me a lot of comments and make me get up and quit being lazy!<br />

I decided to make Oreo truffles since I didn't have time to bake a cake and let it cool. These are so simple to make:<br />
<br />
1. Get a bag of Oreos. Or, if you buy the big family boxes at Sam's get three sleeves of Oreos. <br />
<br />
2. Get a package of Cream Cheese. <br />
<br />
3. Put Oreos in food processor until they are all crumbled up. <br />
<br />
4. Add cream cheese to food processor and let it go until everything is a big blob.<br />
<br />
5. Put all of this in plastic wrap or a bowl or whatever else will hold it and put it in the freezer for an hour or less. (You could also put it in the fridge for longer than an hour.) <br />
<br />
6. Take it out and roll it into balls. I recommend about a tablespoon each. Or less. I used a coffee scoop this time and I felt like they were too big. As far as I am concerned one to three small bites is perfect. Do them whatever size makes your mouth happy. <br />
<br />
7. Dip them in chocolate. Or make them into little cupcakes. We've done both. They are splendid no matter what. If you like Oreos, I think you will love these Oreo Truffles. <br />

I took it to my Aunt Bonnie's house one time for a family gathering. I took it there and baked my used-to-be-famous hot fudge pudding cake in it. When I got it back a couple of weeks later it had shrunk to 8x8". I didn't even realize this until I made another hot fudge cake and it spilled out all over my oven. I asked about my 9x9" pan but was told it did not exist. Someone in my family has it, they must. </span><br />
<br />
<span style="font-size: small;"> I have been looking to purchase another 9x9 pan all these years. Scouring the internet, factory outlet stores, discount stores, department stores, specialty stores. No luck. </span><br />
<br />
<span style="font-size: small;"> Yesterday I was just minding my own business in JCPenney and what did I spy? A 9x9 ceramic baking dish! Close enough, pal! I can make my soon-to-be-famous-again hot fudge pudding cake again.</span><br />

It was fabulous. We've had Key Lime in Key West, and hers was a solid '10'. It was tart and think and delicious. I knew she would never make another one in a couple of weeks. When we have something great it's all we can think about and within a couple of weeks we are jonesing (spell check wanted me to change 'jonesing' to 'jousting' - or indonesia- what the heck?) for it again.<br /><br />As it turns out, I was out and about last Thursday when I spoke with my mother and found out she was indeed making another Key Lime Pie! Except she needed? Lime. Okay then, this is totally typical for us. I told her I would bring one on my way home. (Reason #7 why it's great to live around the corner from your mother - bringing stuff home to each other in a pinch.) I made the drop off. She made no mention of sharing the pie, but I had bought the stuff to make one myself, so I was only a little hurt.<br /><br />Short story long? I made my Key Lime Pie. I started with a graham cracker crust pre-made from the store. I justified this by telling myself this way the crust was a sure thing - all I had to learn was the pie. I used <a href="http://www.oprah.com/recipe/food/recipesdesserts/20090408-tows-key-lime-pie">the recipe from Mar-a-Lago</a>, which was the same one mom used. I followed it exactly. I even set a timer for the whipping times.<br /><br />Mine is a little more light and fluffy than mom's was. I bet she adjusted her mixer speed (lowered it) like the KitchenAid book says to do. I didn't because I expected the folks at Mar-a-Lago had a mixer at least as powerful as ours. My flavor was absolutely perfect. Next time I will do the crust myself. It looks like a no-brainer, and I have no excuse now not to do it.<br /><br />Try something new and unexpected. Peach makes me think of tea - pretty sure coffee just shouldn't smell that fruity; makes me think of tea with every swallow. My husband had Summer Safari Blend - that one is superb. The variety he sent is a excellent way to figure out just which to order. My daughter is so thrilled - she now wants one to take to college.<br />

I'll tell you why. Because all I can think about (at 8:30 in the morning, no less) is this caramel sauce. I mean, really. It is <span style="font-style: italic;">that</span> good. It is already my favorite. I have to admit coming up with a favorite sauce from the three choices is like trying to choose your favorite cute snugly puppy. They are all wonderful.<br /><br />I expected to like chocolate best. I am a chocolate hound, you see. So I tried chocolate first and declared chocolate the winner. Then I tried the caramel. By 'then', I mean about three seconds later. I declared caramel the winner. Next (another three seconds later) I tried White Chocolate with Pear William. Guess what? It was my new favorite! Then I thought about drinking the caramel sauce, but I had left it in the kitchen. Instead I was civilized and just licked the bowl I had used for the caramel. Bowl licking is not normal around these parts, but that was before <a href="http://www.somebodysmothers.com/">Somebody's Mother</a> was involved. Somebody's Mother's Sauces are the best I have ever had. Sure, I make a passable caramel sauce myself. I can even take it to pot luck type things. One time a lady even poured it on her tortilla wraps. Somebody's Mother's sauces put mine to shame.<br />I think today I am going to make myself a banana split just so I can have all three sauces on ice cream. I simply have to share them with my eighty-three year old grandparents, too. They know what good is. Not that I am admitting to hearing voices or anything. Except to tell you how they sound. Hmmmm..... Seven things that make me awesome? Let me go poll the children. Via text message, of course, which is their preferred method of communication. For the sake of clarity, these children are aged 16-23. Response #1: "? What?" - Not exactly what I was hoping for... let's move on to... Response #2: "The fact that you will get your son a new phone as an act of kindness =]" Respondents 3 & 4 Must be taking a long time because there are so many things to list. It is going to be difficult to narrow this down to seven things. I can tell already. Respondent #1 seems to be a bit hung up now, too. I wonder if they <span style="font-style: italic;">all</span> need new phones?<br /><br />#1 has finally come back with an answer (wise-guy) She says "Your kids." I'm through with her for now. I guess they took this as more of an essay question. It could take a few weeks to really write a good paper titled "What makes mom awesome." I admit when I am wrong. It's rare enough I can afford to be generous. ;)<br /><br />5. I bake good bread. I am loved for my bread. And any song into a differnt song. Even people who know me well do not really know this about me. It's more like a superpower. It's a good thing we used the cream cheese frosting. They are sweet enough without adding butter cream frosting to the mix.<br /><br />Some of them look more like something Alice would have seen in Wonderland, and some of them are plain old adorable. We have more ideas now about what to do (and what not to do) for when we make the next ones. Next up will probably be red velvet.<br /><br />To make the cupcake pops we just poked a hole with a toothpick in the bottom of the cupcake and then dipped a lollipop stick in the same flavor chocolate as the bottom and pushed it in. I hope I meet one of them some day. I'm lame, I know it. It's one of my endearing qualities. Right?<br /><br />Moving on. I read about cupcake balls a few places on the internet and was mildly interested. Then I was reading <a href="http://thepioneerwoman.com/cooking/2009/03/quick-and-easy-cupcake-bites/">The Pioneer Woman</a> one day and saw the mini cupcake looking cupcake ball treats and thought "OHMYGOSH! I can actually <span style="font-style: italic;">do</span> this!" So I commenced to doin'. I made these last night and I had a lot of fun. They're cute, too. For once I didn't worry about being perfect, maybe that's why I enjoyed it so much. I know these pictures are not the best. They were snapped in haste by a volunteer, and I'm grateful. I will make more soon and I hope to post better pictures. This recipe was on <a href="http://thepioneerwoman.com/cooking/2009/03/quick-and-easy-cupcake-bites/">The Pioneer Woman</a>, with better pictures. She had <a href="http://bakerella.blogspot.com/">Bakerella</a> over to give a demonstration. Bakerella makes all kinds of cute varieties and shows them on her site.<br /><br />Here's how simple it was:<br />1. Bake a 9x13 cake. Even from a box. Whatever flavor you like. I did chocolate.<br />2. Let the cake cool completely. I cooled mine overnight.<br />3. In a large bowl, completely crumble up the cake.<br />4. Add 2 cups frosting and mush it all together until it is completely mixed. Use your hands. It feels like quicksand when you're done. Not that I have ever felt quicksand. But it does. (2 cups is exactly the amount in a tub of frosting from the grocery store!)<br />5. put the mixture in the fridge and get it nice and cold. I put mine in for at least a couple of hours, but Bakerella says an hour should be good.<br />6. Take it out and roll it into balls. I used a Tupperware coffee scoop to sort of measure it. Just so all the balls would be of equal sizes. You can just use your hands, or use a cookie scoop, or whatever else you want. This is supposed to make about 50. The scoop I used made 48. Next time I'm going to make them a bit smaller. Just my preference.<br />7. Put the rolled balls in the fridge for about an hour. I ran to the store to buy chocolate while mine were in the fridge. The bags of milk chocolate I thought I had were nowhere to be found.<br />8. Take the balls out of the fridge.<br />9. Fill candy cups (the kind you would use for a peanut butter cup) about a third way full to half full. You'll sort of get the hang of it after you do a couple.<br />10. Put a cake ball down into each chocolate filled spot.<br />11. Put the tray in the fridge for a few minutes. By the time I did the next tray, the first one was ready to come out.<br />12. Turn the tray upside down and gently push the bottom of each piece of candy in the mold. They will pop right out.<br />13. Dip the part of the cake ball which is still exposed into a different color of melted chocolate.<br />14. Sprinkle with whatever kind of decorative stuff you want.<br />15. Wait two seconds then eat!<br />16. You can wait longer than two seconds, if you want.<br /><br />Bakerella says these can be stored in an airtight container for up to two weeks with no problem and no refrigeration. Although you can put them in the fridge if you would like.<br /><br />*I say airtight is too much. As an old Tupperware lady I say never keep cake in an airtight container. This is why Tupperware ladies never tell you to burp your cake taker. It promotes fast mold. Also, as an experiment I put some in an airtight container and some were not in an airtight container. After a few days (Bakerella says they can be kept up to two weeks) the ones in an airtight container were sweating. I say give them <span style="font-style: italic;">some</span> air. The ones getting air are still in perfect condition.<br /><br />They really do taste better the second day. According to <a href="http://bakerella.blogspot.com/">Bakerella </a>they get better every day. We shall see! I'm taking some to my granparents tomorrow. I'll be making them again for Easter.<br /><br /><br /><br />SUPER BIG HINTS: If your cupcake balls are too cold and the chocolate very hot suction starts to play a part. If the chocolate gets low in the dipping dish = suction. And I had TOTAL suction when I tried her spoon tap trick. Little suckers would not release from the spoon. This is why I made two cupcake balls and 46 with the chocolate molds. Definitely do the chocolate molds. Cuter and way easier.<br /><br />Oh yeah, you will need:<br />A homemade 9x13 cake or 1 cake mix baked in a 9x13 inch pan.<br />16 oz, 2 cups, or one tub of frosting from the grocery store.<br />Sprinkles or whatever you want to decorate the tops.<br />1 bag of milk chocolate (or whatever color/s you want) for the bottoms.<br />1 bag of whatever color/s chocolate you want for the tops.<br /><br />(You will have leftover chocolate) I got my chocolate at Michael's and JoAnn Fabrics. I know they even sell it at WalMart. I used Wilton's candy melts because I have worked with them a lot in the past and am very comfortable with them. I think they are super easy to use.
